From Field to Fork at Todenham Manor Farm

XXXXXX

Todenham Manor Farm is the local supplier of our pork, bacon and ham. Our head chef, Chris, recently spent a day at the farm with owner Diarmuid and head butcher Jim, learning about the philosophy that brings their award-winning meat from field to fork.

Established since 2005, Todenham Manor Farm produces traditionally-reared pork and beef and is situated just seven miles north of us here in Stow. Chris had a fantastic day at the farm and was immediately impressed with how much freedom the animals have. The rich Cotswold pasture land allows their pigs and cattle to roam freely, which in turn allows their team to produce the most tender and delicious meat possible.

They raise the famous rare-breed Gloucester Old Spot, Saddleback and Middle White pigs, which are slaughtered a short four miles away, minimising the stress to the animal. The meat is then returned to their on-site butchery where they produce their delicious sausages, bacon and different cuts of meat.

The farm supplies us with bacon and sausages for our breakfasts – handmade to their own tried and tested recipe – as well as the ham hocks which feature on our lunch menu as part of our Ham and Eggs dish.

We particularly love that Todenham Manor Farm aren’t just a commercial meat supplier; they don’t believe in shortcuts so we’ve been able to build a much more personal working relationship with them, which fits in well with our own ethos here at The Old Stocks. Plus they’re right on our doorstep – and meat doesn’t get much more local than that!

It’s fantastic to have the farm on board and we’re looking forward to working with them over the coming season.
