Tell us about your business and the products you supply
We are a Cotswold based smokery specialising in the crafting of smoked salmon through an entirely handcrafted process that follows a traditional artisan Nordic smoking process.
We source our salmon from the most sustainable and trusted farm, Loch Duart, located on the North-West coast of Scotland and smoke our salmon at our Smokery at Daylesford Farm within 48hrs of it being caught.
Our process is 100% free of plastic, using only the essential ingredients: salmon, salt and smoke.

The Old Stocks Inn’s philosophy fits perfectly with our ideals. They source locally, aiming for the best quality and freshness. We are really proud to have our product on their menu, wisely balanced by the chef in order to add a touch of innovation into traditional British cuisine.
Every week, we supply the Old Stocks with our whole sides straight after they have been smoked and on their menu you can taste our delicate smoked salmon vertically hand sliced wisely matched with crispy poached egg, yogurt and a dill dressing.
What do you think makes the Cotswolds area so special when it comes to food and drink?
Here at the Atelier smokery, we strongly believe that beautiful places produce beautiful products. The Cotswold is an emblem of this idea. Pure air and gorgeous nature can just inspire local producers to reach unique levels of quality but at the same time we understand how important it is to be as sustainable as possible within the local environment.
On the other side, the community here love to taste and proudly share the product of its land giving us producers great satisfaction.
What makes your business stand out from the crowd?
The smoked salmon we provide is a very popular product inside British kitchens, but massive production has established a plain smoky taste delivering just the traditional paper cut slices.
We wanted to do things differently. Over the years, we have put a lot of effort into learning from the best salmon smokers in order to be able to master this heritage of craft. And now we can experiment with all its shades of taste, showing to our customers the incredible natural qualities of the smoked salmon. From the buttery and delicate slices of the belly to the intense smoky flavour of the tail. Furthermore, we cut our sides in vertical slices to let the consumer feel the full flavour of the smoked salmon.
